Nav\u00edc nejsou tak chutn\u00e9, jako v\u00fdrobky vyuzen\u00e9 studen\u00fdm \u010di tepl\u00fdm kou\u0159em, nebo\u0165 jsou v <a href=\"https:\/\/www.kamnakrby.cz\/udirny\">ud\u00edrn\u011b<\/a> velice kr\u00e1tkou dobu. Av\u0161ak pr\u00e1v\u011b d\u00edky t\u00e9to velmi kr\u00e1tk\u00e9 dob\u011b uzen\u00ed se tento zp\u016fsob vyu\u017e\u00edv\u00e1, nebo\u0165 m\u00e1te vyuzen\u00e9 maso prakticky hned na tal\u00ed\u0159i.<\/p>\n<h2>Uzen\u00ed<\/h2>\n<p>Hork\u00fdm kou\u0159em se rozhodn\u011b neud\u00ed uzeniny, ty n\u00e1m toti\u017e p\u0159i teplot\u011b hork\u00e9ho kou\u0159e popraskaj\u00ed a vyschnou. P\u0159i uzen\u00ed masa mus\u00edme b\u00fdt tak\u00e9 ze za\u010d\u00e1tku velmi opatrn\u00ed, aby se nesp\u00e1lilo, nebo\u0165 pak na povrchu vznikne tvrd\u00e1 krusta a maso vevnit\u0159 se t\u00edm p\u00e1dem neprope\u010de. Ud\u00ed se vlhk\u00fdm d\u0159evem \u010di vlhk\u00fdmi pilinami, aby byl kou\u0159 po celou dobu vlhk\u00fd. Maso se t\u00edm p\u00e1dem prope\u010de a z\u00e1rove\u0148 vyud\u00ed. Tento zp\u016fsob uzen\u00ed trv\u00e1 jen jednu a\u017e \u010dty\u0159i hodiny. Tento proces uzen\u00ed se skl\u00e1d\u00e1 ze \u010dty\u0159 f\u00e1z\u00ed \u2013 rozvla\u017een\u00ed, osu\u0161en\u00ed, uzen\u00ed a vypalov\u00e1n\u00ed.<\/p>\n<h2>Rozvla\u017een\u00ed<\/h2>\n<p>Jako prvn\u00ed mus\u00edme prov\u00e9st rozvla\u017een\u00ed. To se prov\u00e1d\u00ed tak, \u017ee maso vlo\u017e\u00edme do vody a v t\u00e9 vod\u011b jej proh\u0159ejeme na teplotu 80\u00b0C. Doba tohoto proh\u0159\u00e1t\u00ed p\u0159\u00edmo z\u00e1vis\u00ed na velikosti masa, ale v\u011bt\u0161inou to trv\u00e1 1 a\u017e 1,5 hodiny. Pot\u00e9 se maso vyt\u00e1hne a nech\u00e1 okapat.<\/p>\n<h2>Osu\u0161en\u00ed<\/h2>\n<p>Pot\u00e9 se mus\u00ed maso osu\u0161it v <a href=\"https:\/\/www.kamnakrby.cz\/udirny\">ud\u00edrn\u011b<\/a>. Okapan\u00e9 maso se zav\u011bs\u00ed na h\u00e1\u010dky do ud\u00edrny, kter\u00e1 je p\u0159edeh\u0159\u00e1t\u00e1 na 60\u00b0C. Jakmile vid\u00edme, \u017ee je maso na povrchu such\u00e9, postupn\u011b zvy\u0161ujeme teplotu na 90 a\u017e 100\u00b0C. Nav\u00fd\u0161en\u00ed teploty mus\u00ed b\u00fdt plynul\u00e9 po dobu cca p\u016fl hodiny, aby se na mase nevytvo\u0159ila tvrd\u00e1 krusta.<\/p>\n<h2>Proces uzen\u00ed<\/h2>\n<p>Po zv\u00fd\u0161en\u00ed teploty na 100\u00b0C p\u0159ich\u00e1z\u00ed proces uzen\u00ed. P\u0159i uzen\u00ed p\u0159isyp\u00e1v\u00e1me do ohn\u011b mokr\u00e9 piliny, aby byl kou\u0159 po celou dobu uzen\u00ed vlhk\u00fd. Teplota kou\u0159e by nem\u011bla p\u0159es\u00e1hnout 100\u00b0C, tak\u017ee ji regulujeme regula\u010dn\u00ed klapkou na ud\u00edrn\u011b anebo p\u0159iha\u0161ov\u00e1n\u00edm ohn\u011b vodou.<\/p>\n<h2>Vypalov\u00e1n\u00ed<\/h2>\n<p>Po uzen\u00ed hork\u00fdm kou\u0159em op\u011bt p\u0159ich\u00e1z\u00ed na sc\u00e9nu vypalov\u00e1n\u00ed. Na konci uzen\u00ed zv\u00fd\u0161\u00edme teplotu kou\u0159e na 120 a\u017e 150\u00b0C. T\u00edm vytvo\u0159\u00edme na ji\u017e prope\u010den\u00e9m mase k\u016frku. Vypalov\u00e1n\u00ed trv\u00e1 jen deset minut a nep\u0159eru\u0161uje se.
