Pokud jste si po\u0159\u00eddili <a href=\"https:\/\/www.kamnakrby.cz\/grily-na-drevene-uhli-weber\">zahradn\u00ed gril<\/a>, jist\u011b tato ot\u00e1zka nejednou vyvanula ve Va\u0161\u00ed mysli. M\u016f\u017ee b\u00fdt zdrav\u00e9, pokud dodr\u017e\u00edte z\u00e1kladn\u00ed pravidla. V tomto \u010dl\u00e1nku V\u00e1m p\u0159edstav\u00edme n\u011bkolik faktor\u016f, kter\u00e9 mohou ovlivnit zdrav\u00e9 grilov\u00e1n\u00ed. <\/p>\n<p>Grilov\u00e1n\u00ed je velmi rychl\u00fd a obl\u00edben\u00fd zp\u016fsob p\u0159\u00edpravy pokrm\u016f bez pot\u0159eby p\u0159id\u00e1vat p\u0159ebyte\u010dn\u00fd tuk. U\u017e jen p\u0159\u00edprava bez p\u0159idan\u00e9ho tuku sni\u017euje riziko srde\u010dn\u00edch nemoc\u00ed a vzniku rakoviny. P\u0159i tepeln\u00e9 \u00faprav\u011b v pokrmu vznikaj\u00ed t\u0159i druhy \u0161kodliv\u00fdch l\u00e1tek.<\/p>\n<p>Prvn\u00ed skupinou jsou polycyklick\u00e9 aromatick\u00e9 uhlovod\u00edky neboli PAU. Ty se tvo\u0159\u00ed na povrchu masa tam, kde se p\u0159ip\u00e1l\u00ed. Mohou se odstranit odkrojen\u00edm anebo se\u0161kr\u00e1b\u00e1n\u00edm.<\/p>\n<p>Druh\u00e1 \u0161kodliv\u00e1 skupina l\u00e1tek, kter\u00e1 se tvo\u0159\u00ed v mase, jsou heterocyklick\u00e9 aminy neboli HA. Tyto l\u00e1tky se bohu\u017eel tvo\u0159\u00ed vevnit\u0159 masa, tak\u017ee je nem\u016f\u017eeme mechanicky odstranit. Tvo\u0159\u00ed se p\u0159i dlouh\u00e9m grilov\u00e1n\u00ed za vysok\u00e9 teploty. \u010c\u00edm d\u00e9le se maso griluje, t\u00edm v\u00edce se tam HA vytvo\u0159\u00ed. Pr\u00e1v\u011b nejv\u00edce HA se tvo\u0159\u00ed p\u0159i p\u0159\u00edprav\u011b ku\u0159ec\u00edch prsou, ty toti\u017e nejsou zrovna vhodn\u00e9 ke grilov\u00e1n\u00ed.<\/p>\n<p>Posledn\u00ed skupinou, o kter\u00e9 se v posledn\u00ed dob\u011b mluv\u00ed, jsou akrylamidy. Ty vznikaj\u00ed p\u0159i pe\u010den\u00ed a grilov\u00e1n\u00ed potravin se zv\u00fd\u0161en\u00fdm obsahem \u0161krobu, tak\u017ee t\u0159eba brambory.<\/p>\n<h2>Jak grilovat zdrav\u011b<\/h2>\n<p>Ve zkratce, p\u0159i grilov\u00e1n\u00ed mus\u00edme omezit tvorbu karcinogenn\u00edch l\u00e1tek. Z\u00e1kladem je v\u00fdb\u011br kvalitn\u00edch surovin. Nejvhodn\u011bj\u0161\u00ed je grilovat \u010derstv\u00e1 masa s n\u00edzk\u00fdm obsahem tuku, ze kter\u00e9ho odstran\u00edme v\u0161echen viditeln\u00fd tuk a pou\u017e\u00edvat marin\u00e1dy, kter\u00e9 obsahuj\u00ed minim\u00e1ln\u00ed mno\u017estv\u00ed tuku. D\u00e1le je vhodn\u00e9 do t\u011bchto marin\u00e1d p\u0159id\u00e1vat rozmar\u00fdn, nebo\u0165 ten obsahuje velk\u00e9 mno\u017estv\u00ed p\u0159\u00edrodn\u00edch antioxidant\u016f. Vyh\u00fdbat byste se m\u011bli grilov\u00e1n\u00ed hotov\u00fdch masn\u00fdch v\u00fdrobk\u016f, jako jsou klob\u00e1sy anebo \u0161pek\u00e1\u010dky. U ryb je to p\u0159esn\u011b naopak, proto\u017ee ryb\u00ed tuk se pova\u017euje za velmi zdrav\u00fd, zabra\u0148uje toti\u017e srde\u010dn\u011b-c\u00e9vn\u00edm chorob\u00e1m.
