Nakl\u00e1d\u00e1n\u00ed masa je velmi d\u016fle\u017eit\u00fd proces, av\u0161ak nen\u00ed to v\u016fbec slo\u017eit\u00e9. Nej\u010dast\u011bji se pro uzen\u00ed pou\u017e\u00edv\u00e1 maso vep\u0159ov\u00e9, dr\u016fbe\u017e\u00ed anebo ryby. Vep\u0159ov\u00e9 maso je ze v\u0161ech nejobl\u00edben\u011bj\u0161\u00ed, nej\u010dast\u011bji se pak ud\u00ed krkovice, koleno, b\u016f\u010dek, \u017eebra, kotleta, cel\u00e1 k\u00fdta, jazyk nebo slanina.<\/p>\n<h2>Z\u00e1kladem je s\u016fl<\/h2>\n<p>Nej\u010dast\u011bji se na uzen\u00ed p\u0159ipravuje vep\u0159ov\u00e9 maso. Ne\u017e maso d\u00e1me do ud\u00edrny, mus\u00edme jej nasolit. T\u00edm dojde ke konzervaci, zk\u0159ehnut\u00ed a dochucen\u00ed masa. Z masa pot\u0159ebujeme p\u0159ed uzen\u00edm dostat jeho \u0161\u0165\u00e1vu a nahradit ji sol\u00ed anebo l\u00e1kem. P\u0159ipraven\u00e9 maso na nalo\u017een\u00ed by nem\u011blo b\u00fdt \u010derstv\u00e9, ale ani moc odle\u017eel\u00e9. V \u017e\u00e1dn\u00e9m p\u0159\u00edpad\u011b by nem\u011blo b\u00fdt mra\u017een\u00e9. Doba, jak dlouho bude maso p\u0159ed uzen\u00edm nalo\u017eeno, z\u00e1vis\u00ed na okoln\u00ed teplot\u011b a na velikosti masa. V\u011bt\u0161\u00ed kusy masa s kost\u00ed se nakl\u00e1daj\u00ed nejd\u00e9le a je u nich nejv\u011bt\u0161\u00ed riziko, \u017ee se zkaz\u00ed. V tomto p\u0159\u00edpad\u011b je nejlep\u0161\u00ed s\u016fl s pomoc\u00ed marinovac\u00ed jehly vst\u0159\u00edknout p\u0159\u00edmo ke kosti.<\/p>\n<h2>Kuchy\u0148sk\u00e1 s\u016fl<\/h2>\n<p>V d\u0159\u00edv\u011bj\u0161\u00ed dob\u011b byla nejpou\u017e\u00edvan\u011bj\u0161\u00ed pro nakl\u00e1d\u00e1n\u00ed oby\u010dejn\u00e1 kuchy\u0148sk\u00e1 s\u016fl. Jej\u00ed pom\u011br na 10 kg masa je v pr\u016fm\u011bru 250 g. P\u0159\u00edpadn\u011b m\u016f\u017eete p\u0159idat i 200 a\u017e 400 g \u010desneku, z\u00e1le\u017e\u00ed ale na va\u0161\u00ed individu\u00e1ln\u00ed chuti. Doba nalo\u017een\u00ed masa je pak 4 a\u017e 6 t\u00fddn\u016f. Nev\u00fdhodou nakl\u00e1d\u00e1n\u00ed pouze v kuchy\u0148sk\u00e9 soli je to, \u017ee je tu velk\u00e9 riziko zka\u017een\u00ed masa. Naprosto nezbytn\u00e1 pro tento zp\u016fsob nakl\u00e1d\u00e1n\u00ed je hygienick\u00e1 \u010distota n\u00e1dob, kde je maso nalo\u017eeno, a tak\u00e9 \u010distota prost\u0159ed\u00ed, kde je tato n\u00e1doba s masem um\u00edst\u011bna.<\/p>\n<h2>Sol\u00edc\u00ed sm\u011bsi<\/h2>\n<p>Dal\u0161\u00ed mo\u017enost\u00ed krom soli jsou <a href=\"https:\/\/www.kamnakrby.cz\/koreni\">sol\u00edc\u00ed sm\u011bsi<\/a> s dusi\u010dnany. Tyto sm\u011bsi maso zabarv\u00ed do r\u016f\u017eova a sni\u017euj\u00ed riziko jeho zka\u017een\u00ed. Sm\u011bs p\u0159iprav\u00edme z kuchy\u0148sk\u00e9 soli, dusi\u010dnanu draseln\u00e9ho a cukru, kter\u00fd zjemn\u00ed maso a zv\u00fdrazn\u00ed jeho chu\u0165. Pom\u011br ve sm\u011bsi je 1 kg soli, 20 g dusi\u010dnanu draseln\u00e9ho a 30 g cukru. Cukr je nejlep\u0161\u00ed pou\u017e\u00edt ve form\u011b mou\u010dka. Na 10 kg masa se pou\u017eije cca 250 g sm\u011bsi a tak\u00e9 \u010desnek, kter\u00e9ho se p\u0159id\u00e1 200 a\u017e 400 g podle chuti. Samoz\u0159ejm\u011b existuj\u00ed i p\u0159edem p\u0159ipraven\u00e9 sm\u011bsi, kter\u00e9 koup\u00edte v obchod\u011b, tak\u017ee si s t\u00edm nemus\u00edte d\u00e1vat pr\u00e1ci.<\/p>\n<h2>Such\u00e9 solen\u00ed<\/h2>\n<p>Postupy p\u0159i nakl\u00e1d\u00e1n\u00ed masa jsou potom t\u0159i, a to such\u00fd, mokr\u00fd a kombinace t\u011bchto dvou zp\u016fsob\u016f. Solen\u00ed na sucho se nej\u010dast\u011bji pou\u017e\u00edv\u00e1 p\u0159i p\u0159\u00edprav\u011b masa do klob\u00e1s, sal\u00e1m\u016f a jin\u00fdch uzenin. Maso nakr\u00e1j\u00edme na men\u0161\u00ed kousky a sm\u00edch\u00e1me se sol\u00ed a nech\u00e1me v chladu odle\u017eet 1 a\u017e 3 dny. Pot\u00e9 se maso m\u016f\u017ee nad\u00e1le zpracovat, tedy ml\u00edt a plnit do st\u0159\u00edvek.<\/p>\n<h2>Mokr\u00e9 solen\u00ed<\/h2>\n<p>Pro metodu mokr\u00e9ho solen\u00ed si mus\u00edme p\u0159ipravit l\u00e1k. Ten vznikne sm\u00edch\u00e1n\u00edm vody a sol\u00edc\u00ed sm\u011bsi. Sm\u011bs vsypeme do va\u0159\u00edc\u00ed vody a d\u016fkladn\u011b m\u00edch\u00e1me, dokud se sm\u011bs nerozpust\u00ed. Pot\u00e9 nech\u00e1me l\u00e1k vychladit. M\u016f\u017eete do n\u011bj tak\u00e9 p\u0159idat nejr\u016fzn\u011bj\u0161\u00ed ko\u0159en\u00ed dle Va\u0161\u00ed chuti. Skv\u011ble se do n\u011bj hod\u00ed nap\u0159\u00edklad jalovec, bobkov\u00fd list anebo rozmar\u00fdn. Nej\u010dast\u011bji pou\u017e\u00edvan\u00fd l\u00e1k je 7% a 12%. To znamen\u00e1, \u017ee na litr vody pou\u017eijeme 70 anebo 120 g sm\u011bsi. Na 10 kilogram\u016f masa se pr\u016fm\u011brn\u011b spot\u0159ebuje 5 litr\u016f l\u00e1ku.<\/p>\n<h2>Nakl\u00e1d\u00e1n\u00ed do l\u00e1ku<\/h2>\n<p>Postup nakl\u00e1d\u00e1n\u00ed s pomoc\u00ed l\u00e1ku je pak jednoduch\u00fd. Do n\u00e1doby naskl\u00e1d\u00e1me neosolen\u00e9 kousky masa, kter\u00e9 jsme p\u0159edt\u00edm omyli. Pot\u00e9 je zalijeme p\u0159ipraven\u00fdm l\u00e1kem a maso zat\u00ed\u017e\u00edme tak, aby bylo cel\u00e9 pono\u0159eno v l\u00e1ku a pak jej d\u00e1me do chladu, nejl\u00e9pe do lednice. Jednou a\u017e dvakr\u00e1t t\u00fddn\u011b je pot\u0159eba maso p\u0159ekl\u00e1dat, tzn. kousky navrchu d\u00e1me dospod a maso zespoda p\u0159end\u00e1me navrch. Dle pot\u0159eby v pr\u016fb\u011bhu nakl\u00e1d\u00e1n\u00ed l\u00e1k m\u011bn\u00edme. Pokud l\u00e1k zm\u011bn\u00ed v\u016fni, m\u011bn\u00edme okam\u017eit\u011b.<\/p>\n<h2>Sm\u00ed\u0161en\u00fd zp\u016fsob solen\u00ed<\/h2>\n<p>Posledn\u00ed zp\u016fsob je sm\u00ed\u0161en\u00fd zp\u016fsob solen\u00ed. Ten je v dom\u00e1cnostech v dne\u0161n\u00ed dob\u011b nejvyu\u017e\u00edvan\u011bj\u0161\u00ed. Do omyt\u00e9ho masa nejprve vet\u0159eme s\u016fl a m\u016f\u017eeme p\u0159idat i nakr\u00e1jen\u00fd \u010desnek. Kusy masa naskl\u00e1d\u00e1me co nejt\u011bsn\u011bji do n\u00e1doby a maso zat\u00ed\u017e\u00edme, abychom z n\u011bj vytla\u010dili co nejv\u00edce vzduchu, nebo\u0165 ten je tak\u00e9 jeden z rizikov\u00fdch faktor\u016f, co se t\u00fd\u010de rizika zka\u017een\u00ed masa. To pak ulo\u017e\u00edme do chladu na 1 a\u017e 2 dny. Pot\u00e9 maso vynd\u00e1me a p\u0159elo\u017e\u00edme do p\u0159ipraven\u00e9ho vychladl\u00e9ho l\u00e1ku, zat\u00ed\u017e\u00edme jej a ulo\u017e\u00edme ho zp\u011bt do chladu. Doba nakl\u00e1d\u00e1n\u00ed se pak pohybuje kolem 4 a\u017e 6 t\u00fddn\u016f.<\/p>\n<h2>Ryby a dr\u016fbe\u017e<\/h2>\n<p>Co se t\u00fd\u010de ryb, u t\u011bch se nej\u010dast\u011bji pou\u017e\u00edv\u00e1 mokr\u00e9 solen\u00ed. To se prov\u00e1d\u00ed 8% l\u00e1kem po dobu 10 hodin, u dr\u016fbe\u017ee se tato doba pohybuje p\u0159i 8% l\u00e1ku kolem 3 a\u017e 7 dn\u016f. U tekut\u00e9ho solen\u00ed je ale riziko, \u017ee l\u00e1k zvlhne, za\u010dne smrd\u011bt a kazit se.
